heart healty mahi mahi dinner (for the whole family)
/super simple dinner of mahi mahi and squash and zucchini....doesn't take long to make and can't be any healthier and you don't need to be sailing the oceans to make it (just make sure you buy sustainably caught wild fish if you're not sailing the oceans)
blacken mahi mahi steaks [both sides and edges] with old bay adding desired amount of spice (pictured) or squeeze fresh lime juice and grind sea salt and pepper over the steak before grilling (not pictured but the choice of two of the kids)....grill for 13min on high or until fish begins to flake halfway but check at that point or you risk over cooking
squash and zucchini sliced....grind sea salt and pepper on top of uncooked veggies......sauté 5min on med-low to let the natural juices fill the bottom of the pan (so you don't need to use oil).....turn heat to medium and cook for 10-15 min to desired consistency
if you're still hungry have another round of vegetables
